Aromatic Grilled Orange Chicken (Serves 6)

Ingredients:

  • 1 packet Asian Home Gourmet Thai Aromatic Grill Mariande (Kai Yang) SpicePaste©
  • 1.2 kg (2½ lb) chicken drumlets
  • 1 orange, zest and juice
  • 2 tsp orange marmalade (optional)

Method:

  1. Marinate drumlets with mariande, orange zest, orange juice and marmalade for 1 hour.
  2. Grill drumlets on a preheated grill for about 15 minutes or until cooked.  Brush drumlets with the remaining marinade and turn occasionally.
  3. Serve warm with salad, rice or noodles.

Variations:
You may pan-fry the drumlets instead of grilling.
You may replace chicken with pork ribs or rack of lamb.  Adjust cooking time accordingly.

Cooking Tips:
You may thicken remaining marinade with 1-2 teaspoon of cornflour (cornstarch) in a small saucepot and pour over drumlets.
For more flavourful meat, marinade overnight.
