Seafood Pasta (Serves 4)

Ingredients:

  • 1 packet Asian Home Gourmet Singapore Laksa SpicePaste©
  • 150g (5oz) pasta of your choice (cook according to pack instructions)
  • 350g (¾ lb) seafood (shelled prawns, mussels, clams or squids/calamari)
  • 100g (3½ oz) mixed vegetables
  • 1 medium-sized onion, finely chopped
  • 165ml (¾ cup) coconut milk or milk
  • 55ml (¼ cup) water
  • 1 - 2 tbsp vegetable oil
  • ½ cup almond flakes as garnish (optional)

Method:

  1. Heat oil in a non-stick wok on medium heat.  Add SpicePaste©; stir-fry for 1 minute or until fragrant.
  2. Add onions, vegetables, seafood, coconut milk or milk and water.  Bring to a boil and simmer for 5 minutes.
  3. Pour sauce mixture over cooked spaghetti or pasta.  Garnish and serve.

Baked Tom Yum Fish (Serves 3 - 4)

Spread mixture over fish. Bake for 5-10 minutes or until cooked. Serve with salad and potatoes.
