Stir-Fried Mung Bean Vermicelli (Serves 3)

Ingredients:

  • 1 packet Asian Home Gourmet Singapore Hainanese Chicken Rice SpicePaste© 
  • 250g (½ lb) prawns, shelled and de-veined
  • 150g (5 oz) mung bean vermicelli (glass noodle), soften according to pack instructions
  • 120g (4 oz) chicken, thinly sliced
  • 60g (2 oz) carrots, cut into thin strips
  • 165ml (¾ cup) water
  • 1 tbsp vegetable oil
  • Coriander or spring onions and sliced fresh red chilli as garnish

Method:

  1. Heat oil in a non-stick pan or wok on medium heat. 
  2. Add prawns, chicken and carrots; stir-fry for 5 minutes or until cooked.
  3. Add bean vermicelli, SpicePaste© and water; stir-fry until cooked.  Garnish and serve hot.
