Oriental Peanut Cookies (Makes about 70 cookies)

Oriental Peanut Cookies (Makes about 70 cookies) Ingredients:

  • 1 packet Asian Home Gourmet Peanut Sauce Mix
  • 300g (10 oz) plain flour, sifted
  • 200g (7 oz) fine castor sugar
  • 150g (5 oz) unsalted butter
  • 1 egg yolk, beaten
  • 3 tbsp peanut butter
Method:

  1. Lightly cream butter and sugar at medium speed for 5-8 minutes. Slowly add a teaspoon of egg yolk at a time (Make sure egg yolk is absorbed into the mixture before adding in the next spoonful).
  2. Gently fold in the peanut sauce mix, flour and peanut butter.
  3. Shape the cookie dough into bite-sized shapes and place on baking tray lined with greaseproof paper. Bake at 170°C (340°F) for 15-20 minutes or until the cookies turn golden brown.

Baking Tips: It is important to use butter that is still cold for creaming. This is to ensure that the biscuit mixture doe not curdle when creaming.
