Fragrant Sticky Rice (Serves 4 )

Ingredients:

  • 1 packet Asian Home Gourmet Cantonese Claypot Rice SpicePaste© 
  • 1¾ cups (400 g) glutinous rice, rinsed and drained well
  • 250g (½ lb) boneless skinless chicken thighs, cut into bite-sized pieces
  • 60g (3 oz) bacon, cut into bite-sized pieces
  • 2 stalks spring onions, finely chopped as garnish
  • 1 stalk coriander, finely chopped as garnish (optional)
  • 400ml (1¾ cups) water

Method:

  1. Put rice, water and SpicePaste© into a saucepan.  Mix well. Bring mixture to a boil.
  2. Place chicken and bacon over rice.  Reduce heat, cover and simmer for 15 minutes or until cooked. 
  3. Turn off heat, leave to stand for 10 minutes. Garnish before serving.
