Thai Beef Bruschetta (Serves 4-6)
Ingredients:
- 1 packet Asian Home Gourmet Thai Red Curry SpicePaste©
- 250g (1/2 lb) beef fillet, thinly sliced
- 2 small tomatoes, coarsely diced
- 1 loaf baguette, sliced diagonally, then lightly toasted
- 1 small onion, chopped
- 1-2 tbsp vegetable oil
- 2 tbsp Parmesan cheese as garnish (optional)
- 1 stalk Italian basil leaf (optional)
Method:
- Marinate beef with SpicePaste© for at least 30 minutes.
- Heat oil in non-stick pan on medium heat. Add onion and stir-fry until fragrant. Add beef; stir fry until cooked. Stir in tomatoes and turn off the heat. Set aside.
- Place a spoonful of cooked meat onto the toast. Garnish with cheese and basil leaf. Serve hot.
Variations:
Use your favourite type of bread to replace baguette.
For a different flavour, top with mozzarella cheese instead of Parmesan and bake in the oven for a few minutes.
