Vindaloo fish curry (Serves 4)

Ingredients:

  • 1 packet Asian Home Gourmet Indian Vindaloo Curry SpicePaste©
  • 450g (1 lb) fish fillet, sliced or cut into bite-sized pieces
  • 2 tomatoes, coarsely chopped
  • 1 large onion, finely chopped
  • 4 tbsp (60ml) tomato puree
  • 1 tbsp vegetable oil
  • 2 tbsp almond flakes as garnish (optional)

Method:

  1. Heat oil in a non-stick saucepan on medium heat. 
  2. Add SpicePaste© and onions, stir-fry for 2 minutes. 
  3. Add tomatoes, tomato puree and fish; cook on low heat for 10 minutes.  Garnish and serve hot with rice.
