
This Malaysian Seafood Curry is based on the Sambal Udang, a Malaysian curry recipe made with a special blend of lemongrass and chillies that is commonly cooked with seafood.

Add mussels, bell pepper or capsicum and cook for 5 minutes or until cooked. Serve hot with noodles or rice.
Add beans and spinach; simmer for 1 minute or until cooked. Garnish and serve hot with Naan bread.
Add tomatoes, tomato puree and fish; cook on low heat for 10 minutes. Garnish and serve hot with rice.
