Basil Chicken & Mushroom Stir Fry (Serves 4)


  • 1 packet Asian Home Gourmet Thai Green Curry SpicePaste©
  • 250g (½ lb) chicken breast or fillet, slice into thin strips
  • 100g (3½ oz) button mushroom, quartered
  • 100g (3½ oz) broccoli, cut into small florets
  • 330ml (1½ cup) milk or coconut milk
  • 110ml (½ cup) water
  • 1 tbsp vegetable oil
  • Basil leaves as garnish (optional)


  1. Heat oil in non-stick saucepan on medium heat. Add SpicePaste© and chicken; stir fry for 3 minutes.
  2. Add mushroom, broccoli, milk and water; simmer for 5 minutes or until cooked.
  3. Garnish and serve warm with pasta, gnocchi or rice.

Variations: You may wish to replace chicken meat with turkey, beef, lamb or seafood. For a vegetarian dish, replace the meat with mushrooms or vegetable of your choice.
